Wheaten Bread

Who doesn’t love a wee slice of wheaten, spread thick with butter and a big slice of cheddar cheese. If you don’t we need to talk.

If you go one step further though and add strawberry Jam…we also need to talk, because that is JUST WRONG!!

I’ve been making this recipe for about 4 years now and it always get eaten up within 24 hours…it just sits on the board and chunk by chunk it disappears!

It is so so easy to make, believe me and sometimes I am cross at myself when I reach for a packet of store bought stuff, because this takes no time at all and is so much nicer!

  • 350g/12oz course wholemeal flour
  • 110g/4oz plain flour
  • 225g/8oz porridge oats
  • 1 tsp baking powder
  • 2 tsp baking soda
  •  1/2 tsp salt
  • 75g/3oz caster sugar
  • 1 pint buttermilk
  •  50g/2oz butter

Preheat oven to 180 C

Place first six ingredients into large bowl and rub in margarine

 Add sugar and mix through

Add all buttermilk and mix through

Divide mixture between 3 lined 1lb loaf tins. I sprinkle some flour on the bottom of the tin before I put the mixture in and sprinkle a little oats on the top.

Bake in oven for 40 minutes (180 C)

Turn out of tin, as soon as you take it out of the oven and cool on rack, I also srinkle a little flour on top!

Please, please have ago at making this as you won’t regret it!!
