Easy Peasy Tomato & Basil sauce

This is such a simple, healthy  fresh sauce and it’s perfect for batch making and freezing (and to be honest actually nicer after being defrosted )

It’s a firm favourite in our house…

16 large vine tomatoes
2 cloves of garlic
2 medium onions
12/15 Basil leaves (adjust to taste)
2 tbsp tom purée
2 tbsp olive oil
Pinch of sugar
Salt/pepper to taste

1. Cut a X in the bottom of each tomato, place in a large bowl and cover with boiling water; leave for 15mins.
2. Crush the garlic and finely diced the onions (or if you don’t want tears and the spoon in the mouth isn’t working… Pop into food processor).
3. Pour the water from the tomatoes and peel the skin away, (this should happen easily, if not just place back in fresh boiling water) then quarter the tomatoes and remove the core and seeds…. It’s a messy job but worth it!!
4. Heat the oil in a pan and fry the onions till golden (roughly 3/4 mins), add the garlic in at the end as this can burn quickly and it only really needs a few seconds with the onions.
5. Add the tomatoes and simmer for a few minutes, then add the purée, sugar and salt/pepper; mix well then cover for 10-15 minutes or until the tomatoes have gone mushy!
6. Turn the saucepan off and tear the basil leaves into the pan and stir well… That’s you!!

Serving suggestion: mix the sauce with penne pasta & roast chicken, if your feeling naughty, top with grated mature cheddar and chunks of crusty bread….

***This is also a lovely meal to make for someone who might appreciate a little help one week… Just pour into a mason jar and gift with a packet of pasta and a fresh crusty loaf! ***
